When our founder, Marc Glosserman, was growing up, on each of his birthdays his mother would make him a birthday meal consisting of his favorite foods. Inevitably Marc would ask for fried chicken and French fries. Having been raised in Texas, Marc’s mom was skilled in the ways of southern cooking. Her chicken was not any ordinary chicken either – it was a recipe that had been given to her by her mother-in-law, Mama Els, in which the skin was removed from the bird, seasoned, battered and rolled in a breading of crunched up crackers.
This birthday meal became the inspiration for Hill Country Chicken, which got its start at 25th and Broadway in 2010. Our Food Park stall features some of the greatest hits from our New York flagship in the NoMad neighborhood of Manhattan including Classic Fried Chicken, Texas Tenders (Mama Els-style), signature chicken sandwiches, and sides.
